SALADS

Below you'll find some of my favorite recipes. Enjoy!

CREAMY FRUIT SALAD
(from Vickie)
1 - 14 oz. can fruit cocktail
1 - 14 oz. can sliced peaches
1 - 8 oz. can pineapple chunks
1 - 11 oz. can mandarin oranges
1/4 cup raisins, soaked in hot water 
1/4 cup chopped nuts 
1/2 cup flaked coconut 
1 1/2 cup miniature marshmallows 
1 large pkg. Instant Banana Pudding
1 1/2 cups Cool Whip 
In large serving bowl combine all fruit, undrained (except oranges). Add dry instant pudding mix and stir well; mixture will thicken. Add raisins, nuts, coconut and mix well. Then fold in Cool Whip and marshmallows. Cover and chill for 3-4 hours before serving.

CARROT & RAISIN SALAD

Carrots, peeled and shredded
Raisins, soaked in hot water
Mayonnaise
Mix all ingredients together in serving bowl in quantity desired. Chill before serving.

POTATO SALAD

4 - 5 potatoes, unpeeled
2 - 3 hardboiled eggs, peeled and chopped
2 tbsp. dried minced onion
1 tbsp. dried parsley
1/2 cup Italian Salad Dressing
1/2 cup sweet pickle relish
4 strips bacon, fried and crumbled
Ranch dressing
Mayonnaise
Salt & Pepper, to taste
Boil potatoes in jackets until done; drain. Let cool for about 15 minutes, then peel and dice. Place in bowl and cover with Italian Salad Dressing to marinate overnight. In the morning, combine potatoes and dressing with chopped eggs, onion, parsley, bacon, relish and enough Ranch Dressing to moisten. Add mayonnaise until creamy. Salt and pepper to taste. Chill before serving, adding more mayonnaise if needed.

CHRISTMAS FRUIT SALAD

2 red apples, unpeeled
2 green apples, unpeeled
2 pears, unpeeled
1 orange, peeled & sectioned
3 bananas
Chopped walnuts
Raisins, soaked in hot water
Coconut
Lemon juice
Granulated sugar
Dice all fruit into small bite size pieces. Sprinkle with lemon juice to prevent browning. Add nuts, raisins, coconut and sugar to taste. Refrigerate 2 hours before serving, or have fruits cold before preparing.

TORTELLINI SALAD

Cheese tortellini, cooked and drained
Cherry tomatoes, halved
Chopped olives
Canned Mushrooms, drained
Parsley
Italian Salad Dressing
Mix all ingredients together in serving bowl in quantity desired. Chill before serving.
